Breakfast
The breakfast plan for 2021 week 44 relies on family favorites which routinely appear on the rotation requiring ingredients that are always on hand. All of the recipes have appeared on previous posts.
Lunch
As with breakfast, I depend on lunch recipes from past posts that have become routine.
Dinner
Yet again I am dependent on favorites for the dinner plan. I may try a new recipe for pork chops, but I am more inclined to stick with the tried and true.
Hits and Misses
This soup recipe was on the menu for a timeshare lunch when we were in Myrtle Beach. I never needed to make it, but all of the ingredients were on hand when we returned from Columbus, so we had it for a quick and easy lunch rather that the planned enchilada soup since it required literally no prep. The ‘Ole Buckeye added some sour cream and tortilla chips while I added some fat free Greek yogurt keeping the soup a THM E. It was surprising good. I will definitely keep the ingredients on hand for last minute lunches. It will definitely be included on our timeshare menu plans.
Recap
We are home once again from a long trip and a shorter trip with yet another trip looming in the near future. With that in mind I am taking a break from new creative recipes and relying on the tried and true. I also need to reassess what is currently in the freezer and utilize what is in stock. I will attempt over the next 10 days to reduce the purchase of groceries and rely on what is on hand. Aside from fresh fruit and vegetables I will refrain from over buying. I also hope to return to a more disciplined diet. Travel and restaurant exploration have taken a toll on my good intentions to follow a healthy eating plan. The journey continues. Bon Appetit!
