2021 Week 2 Menu Plan

The 2021 Week 2 Menu Plan is complete, however it may look like a repeat of week 1. Actually it is not a total repeat, however due to the fact that rather than cook once/eat twice, we ate thrice. (or more). Not only did that create less time in the kitchen, but for the most part my meals for 2021 week 2 are already planned and the ingredients are on hand. I have included a link to the recipes from week 1 for convenience.

Breakfast

I did prepare most of the breakfast meals from last week, so the offerings for this week are fresh. I have ricotta cheese that is approaching expiration, thus our favorite breakfast casserole. All of the meals planned are repeats of favorites.

Funniest thing. The best laid plans for great lunches never came to fruition. Why you might ask? I still had so much soup left from the freezer stash as well as dinner left overs that my menu plan was virtually untouched. Aside from the sausage cabbage skillet, which fed us 3 lunches, the other meals as well as ingredients wait to be prepared. Obviously planning for this week has been a piece of cake…simply a repeat.

Incredibly the same problem that I had for the lunch menu carried into the dinner menu plan. Costco had wild salmon, but it was enough for 2 dinners. In addition in order to finish off the meatballs from last week I made Puttanesca to go with them. This meal was off plan but a favorite of the ‘Ole Buckeye. Once again this provided 2 dinners and several lunches. That being said I have included many of the dinners originally planned during week 1. My daughter will be preparing a Green Chef meal and I will try a new recipe featured on The Kitchen last week.

Hit and Misses

I have been in search of a keto scone recipe for some time without success. This “scone” recipe has been renamed by the ‘Ole Buckeye…Breakfast Cake. Why? If you anticipate the texture and flavor of a scone you will be disappointed. If you are looking for a flavorful breakfast treat, you will be delighted. These were very enjoyable and were better the second and third day. I simply stored them in a paper bag as I normally store scones. They look rather primitive but still a Keeper.

The one meal that I did prepare was on Sunday. Since I knew the Crockpot Lasagna make a generous meal, I invited the entire family. I added the pie, because the grand girls always anticipate dessert. We had a great evening together…no pictures, but I decided to include links to the recipes.

Last week seemed disorganized as far as following the planned menu. Granted there were good meals, but much repetition without any fuss. The week ahead gets me back into the kitchen. Bon Appetit!
