The 2021 week 18 menu plan is complete. There were many adjustments to last week’s plan as out of town guests arrived and we enjoyed lunches and dinners “out”. Meals moved forward to week 18. Recipes from week 17.
I will relay that over the past week I have taken part in the Food Revolution Network Summit. Over 8 days 3 hours each day were dedicated to interviews with experts on optimal nutrition based on plant based food choices. They also discussed meditation, pesticides, hormones, and antibiotics in the food supply, organic choices, and a host of other nutrition based topics. In addition were discussions on the effects of our way of eating to the environment. There is a vast amount of information to digest. What I learned both last year and this will be gradually incorporated into our daily eating habits.
Breakfast
The breakfast plan for the week will finish up the pineapple oatmeal, enjoy a favorite casserole and actually prepare the biscuits which never made the table last week.

Lunch
Most of the lunch plans during week 17 were scrubbed. We had plenty of leftover dinners that provided lunch and went our for lunch as well. We will enjoy the previously planned lunches this week.
Dinner
The 2021 week 18 dinner menu includes 2 Green Chef offerings as well as the salmon patties planned for last week.
Finally high school sports have resumed and since both of my grand daughters are on the varsity soccer team, we will grab dinner late after the games. I am very much looking forward to some carefree enjoyable evenings and lots of winning goals.
Hits
I have combined the recipes for two salads creating a true crowd pleaser. I use all of the fruits and vegetables from both and vary the cheeses and nuts depending on what I have on hand. The dressing I use is from the second salad listed. (Poppyseed Dressing with Avocado Oil).

On Monday night there was a change of plans. We had guests for dinner and I prepared a roast salmon. Since it was a last minute meal I scrambled to determine a dessert that utilized ingredients on hand. I had frozen cranberries, so the decision was easy. I made a family favorite.
Misses
We were disappointed in this cobbler. I have a great recipe for Blackberry Cake, so this will be considered a miss and not repeated.

Recap
We enjoyed a great week of eating and sharing good times around the table with friends and family. Food can be such an amazing way to provide memorable moments, bringing people together, which proved to be true this week. We look forward to many more. Bon Appetit.
