The 2021 week 13 menu plan is complete.
Breakfast
The 2021 week 13 breakfast and lunch plans call for a combination of both S and E THM meals. I have 2 new recipes* on the docket for breakfast this week and repeats of favorites. I also hope to make the Keto Cinnamon Bread for Easter.
White Cheddar Sausage Breakfast Biscuits
Lunch
I have lots of eat again lunches carried over from last week. I had dental issues that demanded a change of plans. One new recipe* has been added to the leftovers and favorites.
Chopped Thai Inspired Chicken Salad*
Dinner
We are having a Green Chef dinner with our daughter the beginning of the week. Since grapes were on sale I added a favorite Italian dinner which is not really on plan…but it is so good it is worth the splurge. I have yet to decide about an Easter menu because I am uncertain if it will be a family meal or just the two of us. I do hope to give the Slow Cooker Cauliflower a try.
Rachael Ray’s Roasted Sausage and Grapes
Slow Cooker Pepper Jack Cauliflower*
Hits
Egg bites were first introduced to us by our daughter at Starbucks. Delish…Expensive. She bought an insert for the Instant Pot but she only used it once…the out come so-so. We have purchased egg bites at Costco…expensive. But now we have a fantastic new recipe that is delicious and given a big thumbs up from the ‘Ole Buckeye. What makes it even better is the ease of preparation. Yet another great S breakfast to add to the collection.
This blackberry cake was delicious and is a great breakfast treat, but would also be a great dessert with an E meal. It will be on the plan whenever blackberries are on sale!
And here we have it…yet another great soup, and boy did I appreciate that it was on the menu. After the dental work that I needed, it was the perfect lunch.
This salad was a bit of work, but because it had separate components to create individual salads when ready to eat, it made it possible to have it as an eat again lunch, which most salad recipes do not allow. Quite tasty.
The 99 cent a pound pork butt and a newly found recipe became a huge success. Although I served the pulled pork with both Carolina BBQ sauce and a sugar free BBQ sauce…neither was needed. The pulled pork was delicious on its’ own. High praises from the ‘Ole Buckeye.
I am also including links to repeats of several favorites that we had once again last week…completely enjoyed!
Stacked Tomato and Burrata Salad
Misses
The description of this recipe which featured the Zhoug sauce (described as a fired up pesto, not for the faint of heart) did not truly indicate just how “hot” this sauce is! After scraping the sauce off the surface of the chicken we were able to enjoy the flavor by carefully avoiding the “green”. (It’s not easy eating green.) I warned the ‘Ole Buckeye that there would indeed be having a second serving on another evening, but this recipe will not be repeated. We enjoy hot and spicy, but this sauce is over the top.
Trader Joe’s Slow Cooker Spicy Mediterranean Chicken
Yet another miss. I love Kung Pao Chicken. In addition I happen to love Jenn Segal’s recipes found on Once Upon a Chef. In fact many of our family favorites are from her blog posts. When I found this rendition of Kung Pao, I couldn’t resist giving it a try, even though it was off plan. Mistake. It was an OK stir fry, but in no way tasted like any Kung Pao Chicken I have ever had. Definitely not worth the trouble…or the splattered stovetop.
Food for Thought
Before you discard your eggshells…Put them in the freezer (so they don’t spoil.) When you have enough, add a handful of egg shells to your blender, cover with water, run the blender until the shells are pulverized. Discard the shells in the trash or compost…not down the drain. Wash the blender with soap and water. Rinse thoroughly. Voila…your blender blades have been sharpened!
Recap
Meals didn’t happen in the way planned last week but we did eat successfully and enjoyed the healthy recipes. I am looking forward to another adventure in eating ahead. Bon Appetit!
