The 2020 Week 44 Menu Plan is complete and will focus on depleting the fresh fruits and vegetables and other perishables that I have on hand. We have a trip planned and will be away from home for 2 weeks. Our fingers are crossed that the pandemic will not cause additional closures and we can have a safe trip to St Thomas. We have a time share and this trip has been planned for well over a year, before Covid became a household word.
Breakfast
The breakfasts planned for 2020 week 44 will take advantage of all of the leftover THM E muffins and breakfast cakes from the past weeks. They will be accompanied by yogurt, cottage cheese, and fruit eliminating those perishables from the refrigerator.
Snacks
The snacks planned for the week will utilize perishables on hand as well. I came across this recipe for Triple Zero and I am very anxious to give it a whirl. It will be much cheaper and I can really vary the flavors.
Lunch
I have one new recipe planned, the crack chicken soup. In addition I have enough soup for the remaining days, preventing them from being packed for the freezer. There were several lunch “switch ups” last week, leaving an abundance of left over soup.
Dinner
The dinners for the week include several eat again entrees, a new spaghetti squash recipe and a family favorite white chicken chili planned for the Ohio State vs. Penn State game on Halloween.

Hits and Misses
Although the recipe for these muffins can only be found on the Trim Healthy Member Website, I must proclaim once again just how delicious they are. These will be a breakfast staple as long as I can get cranberries!
Cran-Apple Breakfast Muffins
This butternut squash soup is a basic E soup, with basic ingredients and solid fall flavor. I will say that the cook time is much longer than the recipe indicates to insure that the carrots and squash are softened.
Ok, may I just say that the ‘Ole Buckeye shakes his head when I make a new recipe again. However, more often than not we agree that I have found yet another great recipe. We love Greek flavors and this Greek chicken is wonderful. A big plus…it is a THM fuel pull. Wow. So much flavor. This is a definite repeat.
OMG!! This burger recipe was such a stretch for me as far as flavors, but oh so delicious. It is definitely not your normal burger, but for a turkey burger this was sublime.
Food for Thought
Did you know that grilling and microwaving (Huh?) mushrooms are the two most nutritious ways to cook mushrooms?

Yet again we have enjoyed a great week of enjoyable healthy eating with two surprisingly great entrees. A big plus was my Birthday celebration…lunch at Becca with my 14 year old Granddaughter, happy hour with my son’s family, dinner at Coastal Grill with the ‘Ole Buckeye, and a yummy White Chocolate/Raspberry Bundt Cake from NothingBundtCakes.
