2020 Week 42 Menu Plan

The 2020 week 42 menu plan is complete and includes only a few new recipes, two at lunch and one at dinner. I have put off making Fathead Pizza for eons mainly because I didn’t know quite how many to make in order to make it a true meal. Since my daughter is out of town, I have decided to play with several recipes over the next few weeks. To truly create a great pizza would be extremely gratifying!

Breakfast

I grabbed several frozen zip lock bag breakfasts from the freezer for our road trip. Two of the packets happened to have the cinnamon pecan baked pancake that I made months ago. It is a THM S breakfast and I have been focused on E meals in the morning. Not any more, especially this fall. This baked pancake is excellent and very filling. Hence it appears for breakfast this week. I have enough of the upside down apple cake for additional meals and the French toast will utilize bread that is not fresh enough for sandwiches.

Lunch

S breakfasts call for E lunches and cowboy grub fits the bill. I often make it for dinner, but it will provide several hearty lunches. The harvest soup and taco salad casserole are new recipes, perfect for fall.

Dinner

Dinners for 2020 week 42 are all tried and true aside from the pizza. I have reviewed several recipes for fat head pizza and will give one of them a try. The Greek crock pot chicken recipe is a preparation that the ‘Ole Buckeye and I developed several years ago replicating a Greek chicken we had in Greek town Chicago. It is quick, easy and delicious.

Hits and Misses

If you want your kitchen to smell like fall in the morning this is the way to do it. This cake can easily be served for breakfast or as an E dessert. The ‘Ole Buckeye gave it a big thumbs up.

This Greek salad was not quite on plan, but since it was the first time making it, I decided to follow the recipe. The next time I will try to use much less olive oil to make it more compliant. Regardless of how I make it, it will definitely reappear. It was very good.

If I decide to have a family dinner and the menu includes this meatloaf recipe, I can be assured that everyone will make an appearance at the dinner table. This night was no exception. Six of us ate together and the 16 year old arrived for her portion at 8:45, after soccer practice. In addition to the meat loaf I served a Greek Salad, Glorified Cabbage, and Greek Bouyiourdi followed by a Costco pumpkin pie. (I simply ran out of time and energy to make dessert!)

I revised this recipe making it more THM compliant by omitting the panko bread crumbs and using no sugar added ketchup.  

Bobby Flay’s Roasted Vegetable Meatloaf with Balsamic Glaze

When I deem a recipe a “Family Fav”, it should be on a frequent rotation. Why I have not made this more frequently I simply don’t know. It is so good! I think the last time I made it I decided to use Italian sausage in place of ground beef…I forgot. We had the original and loved every bite. Next time I will try spicy Italian sausage, and the next time will be soon.

Did you know that a typical ear of corn has an even number of rows, which is usually 16? Worth a fact check.

Recap

The menu plan from week 42 changed slightly. I did not make the turkey burgers, nor did we eat the Mama’s Meatloaf from the freezer. Costco had wild salmon again (yippee) and there was leftover Bobby Flay’s meatloaf for an eat again meal. We had breakfast “out” on Sunday at Citrus, a breakfast restaurant close to my son’s home. (We were dog sitting for the weekend.) The omitted meals will move forward to another plan. The 2020 week 42 meals planned definitely reflect a change of season. I look forward to the heartier flavors of fall. Bon Appetit.
