2020 Week 15 Menu Plan

The 2020 Week 15 Menu Plan relies on what I have in the pantry and refrigerator. We had 2 separate food deliveries in the past week. The groceries ordered were based on ingredients needed during week 14 as well as the meals over the next few weeks. Unfortunately I did not acquire all the food that I needed for week 14, so adjustments were made. Several of those meals had to be moved to 2020 Week 15.

Breakfast

One staple that I have plenty of is oatmeal. I also have an abundance of berries some of which need to be used. I have also been able to get bananas easily and we found last week that we really enjoyed the BAM waffles. Those will be included on a weekly rotation. I also have canned pineapple. Planning breakfast for 2020 Week 15 was easy. The added reward is the cook one/eat again bonus.

Soups are on the docket for 2020 week 15 mainly because ingredients are on hand. The only thing currently missing is radishes. The other big reason for soup…it serves multiple meals.

Our dinner plans were really affected with missing grocery ingredients. Several moved to the upcoming week. That may happen yet again if I don’t get my spiral ham from Costco on Saturday.

Recap

All of the Green Chef meals were quite good. The chicken with creamy caper sauce was particularly good and we will attempt to recreate it in the future.

We plan to order more Green Chef meals for week 16.

It’s a Wrap

I am learning to plan even further ahead than I normally do. In fact, I am stocking up on several pantry items when they are available, just to be prepared. It is getting more and more difficult to arrange grocery delivery and pickup. The peak of illness is projected to hit Virginia late April and early May. I imagine that getting food and supplies will be even more difficult at that point.

Even though we are concentrating on one day at a time, planning for these next weeks is becoming more and more critical. We continue to concentrate on healthy eating and implementing as many anti inflammatory enzymes as possible with diet and supplements. Wishing all good health and positive thoughts. Bon Appetit!
