I realize as I plan the menu for week 43, just how easy it is when we are planning another road trip. There are fewer meals to plan and lots of left overs to be utilized before hitting the road. I don’t mind putting together meals for these weeks at all.
Breakfast
The breakfasts planned for week 43 are basic. Since I don’t want to do a grocery run, I am relying on items on hand. Since I always have yogurt and eggs, breakfast is easy. I have enough blueberry pancake for one more morning, breaking up the monotony.
Lunch
The lunch plan for week 43 is simple as well. I am relying on leftovers until we return. Since I don’t want to be locked into specifics when we get home I will use pantry and refrigerator stashes to finish the week.
Dinner
The dinner plan for week 43 is really easy. I am not certain whether we will be leaving on Thursday or Friday. With that in mind, I will delegate leftovers for Thursday evening if we are still at home. When we return from our trip I will be feeding just the 2 of us. I have 2 steaks and 2 barramundi filets in the freezer.
Recap
This past week we enjoyed 3 meals from Green Chef, all very enjoyable. I also did a repeat of the White Chicken Chili, a true family favorite. The 2 additional meals although very good, were not what I had hoped. The meatballs had good flavor but were quite dry. It is far less complicated to simply make Chicken Piccata. The Chicken Carbonara was good as well, but once again, not worth the effort.

Wrap Up
As we prepare for yet another road trip, I am planning to prepare some travel worthy meals and snacks to make the trip more enjoyable. I also need to do a little research to determine where we might be eating in route that will have healthy choices, always a challenge. I am excited for week 43. We will enjoy time with friends and family, see nature’s splendor in the colors of fall, and cheer on the Buckeyes! OH…
