Menu Plan for Week 91 with Trim Healthy Mama
The menu plan for week 91 is complete and although I am posting it a little late, I hope that I have created it thoughtfully enough to be handled with relative ease during a busy week. This Sunday is the East Beach Garden Club’s “Secret Garden Walk” and our courtyard garden will be featured.
I made the mistake a year ago of suggesting that several townhome gardens join together to be featured in order to display how very different each courtyard is. My suggestion was a hit with the planning committee. You guessed it…in the months that followed I convinced my neighbors on either side to join us in this annual event. At the time I never imagined that the winter would be so harsh and that the late cold spring would create havoc on my plans. Regardless, this final week will be filled with an all out effort to enhance the plantings in the courtyard. The adventures in the kitchen will be held to a minimum.
The plans for breakfast during week 91 include only one new recipe. Ina featured it during a Saturday morning broadcast last week and I am hoping to recreate it using my THM granola along with stevia as a sweetener. I have high hopes that this will work. The rest of the week comes out of the freezer or is basic morning fare.

The lunches planned for week 91 include only one new experiment. Since I try to incorporate as many E meals as possible I plan to give the Tex Mex Quinoa a try. Although I have closed the kitchen on Sunday because I foresee a race to the finish line for the garden, I am guessing we will grab whatever we can find for lunch in the process. I just wanted the ‘Ole Buckeye to be forewarned.

The dinner plans for week 91 reflect the grocery specials. Colored peppers were on sale and they were big and beautiful, hence the oven roasted fajitas. We have an abundance of low carb burrito size flour tortillas that need to be used (that’s a whole other story), and the recipe will serve us for at least 2 meals. We also have avocados on hand for the ‘Ole Buckeye’s guacamole. I seldom make an E meal for dinner, however I have an abundance of rotisserie chicken in the freezer that will be ideal in the Poppy Seed Chicken Casserole, the only new recipe on tap.

So there you have it. A menu plan for a busy week. I continue to follow the Trim Healthy Mama guidelines and seek out new and intriguing ideas. I have a whole board on things to try, but this week I need to concentrate on quick and easy.
As I look at the forecast of rain, rain, and more rain, I am wondering how the weather will effect my labors. I think instead of working in my garden I should consider building an arc. Even the event day on Sunday has a 60% chance of rain, after 4 days of 80%-100%. Sigh…
With gardening on the front burner and cooking on the back burner, my week begins. We will continue to eat well, but my time in the kitchen will be minimal.
I would like to take a moment to comment on a particularly good evening meal that my daughter prepared last week. We enjoyed her soup outdoors in the courtyard on a lovely warm evening. The Thai Coconut Chicken Soup was hot and spicy, but absolutely delicious.
The other highlight of the week was the Mothers’ Day dinner that my daughter prepared for my daughter-in-law and I on Sunday. It was yet another wonderful family celebration filled with fun and laughter and a few minor catastrophes. We enjoyed chicken Saltimbocca, roasted broccoli, a huge salad, and Southern coconut pie (definitely off plan). Fabulous. Although none of us took any pictures, I will follow up with her recipes on my next post. Until then…here’s to yet another week of healthy eating! Bon Appetit!
