2022 Week 38 Plant Based Menu

The 2022 week 38 menu is complete and I continue to add more plants to our meals.

Breakfast

Many of the breakfast selections are carry overs from last week. Since I am doing some intermittent fasting, most days I am eating lunch and dinner…no breakfast. I “break fast” for lunch. That being said the breakfast preparations are plentiful for the ‘Ole Buckeye. The recipes for breakfast are here.

Lunch

The ‘Ole Buckeye enjoyed the avocado/hummus sandwiches so much that we had them several days last week. We also had taco leftovers. Several lunches from week 37 are reappearing. Those recipes are here.

Dinner

I have a week’s worth of new recipes for dinner. The Paella was scheduled for last week but our weekend plans shifted. I have added it to week 38 because I am really anxious to try it.

Hits and Misses

This oatmeal preparation was “fine”, but since I have so many others, it will not be a repeat.

Carrot Cake Baked Oatmeal

This roast was certainly not what it was cracked up to be. I made it as directed, but it did not stay formed as a roast…it basically fell apart and looked more like a crumble. This is one of the few times that I wish the meal had not been an eat again offering!

Chestnut and Mushroom Roast

I probably should have served this as a side rather than as an entree, however it was very good and since we had a huge salad and roasted broccoli it provided a great dinner. Definitely worth having again. I will also make my rice and lentils this way in the future.

Majadarra

This salad was a great accompaniment with the Majadarra. I used regular balsamic rather than balsamic glaze and plant based feta. Excellent!

Recap

I can’t say that the meals last week were memorable, but they were healthy. We did take a rather large detour from our plans when we took part in the annual East Beach Ramble, a sort of progressive party with food and drink at 3 “themed stops” in our community. Our dinner on Saturday consisted of corn dogs at the County Fair, meatball sliders and a veggie/cheese bite at the Disco stop, and pizza at the Neon stop. The drink concoctions and jello shots were less memorable. Whatever, sometimes you go with the flow. We watched the Ohio State game when we got home and I enjoyed my wine! Roadblock aside we did have a healthy week of eating. The adventure continues. Bon Appetit!
