2021 Week 12 Menu Plan
The 2021 Week 12 Menu Plan is complete.
Breakfast
I have almost enough eat again left overs to last the entire week! The new recipe is a carry over from week 11…the bacon and guyere egg bites. Instead of individually freezing the overage from last week, I decided to make my mornings super easy and eat everything that has already been prepared. It didn’t take a lot of thought when most of the breakfasts we will repeat are favorites.
Lunch
The lunches for 2021 week 12 will look familiar. They are a definite rerun from last week. Once again I over planned and over prepared. The ‘Ole Buckeye had several left over dinners for lunch and the cheapskate soup seemed to be a bottomless supply. I am always amazed at the number of meals that soup provides.
Dinner
The dinner menu is a different story. I have loads of new recipes on the docket. The Trader Joe’s Slow Cooker recipe sounds quite intriguing and I have the special ingredients on hand, after a trip to Trader Joe’s for the first time in a year. The Caesar chicken and turkey burgers are repeats of favorites, and the meat loaf is a Green Chef meal being prepared by my daughter. Kroger had pork butt on sale for 99 cents a pound, so I will be trying a new pulled pork recipe. I have also planned a slow cooker side to go with the pulled pork.

Since I wasn’t a big fan of our corned beef and cabbage, I made Reuben Sandwiches one evening for dinner in the place of an eat again meal. Although they were off plan…they were absolutely delicious.
I normally do not make a salad for dinner, but this particular salad has intrigued me for quite some time. The ‘Ole Buckeye had a late Zoom meeting so the late dinner salad was perfect and actually quite enjoyable. I will definitely be making this again…Summer salad or lunch fare.
and Misses
I have used this recipe for corned beef in the past and love, love, love the horseradish sauce, but for some reason this year the meal was disappointing. Normally I get my corned beef from Trader Joe’s, but they were out when I made my first pilgrimage there (on the 16th) in just under a year! I am determined that I will not make that mistake again. For several years I have relied on TJ’s corned beef for a successful celebration and I will definitely plan better by planning ahead next year!
I consistently say that I have a collection of over the top chicken recipes which we thoroughly enjoy. However that does not keep me from searching for more. I made this Italian chicken for a family dinner over the weekend. I was disappointed. It wasn’t awful, just not up to our standards. The chicken was dry.
As I move to this next week of meals I am particularly excited about several of the new recipes. I am fairly certain that several will be feeding us twice or even more. Once again the week is planned with a variety of E meals and several new Keto offerings. We continue our quest for healthy enjoyable eating. Bon Appetit!
