2021 Week 49 Menu Plan
The 2021 Week 49 Menu Plan is complete…and late. It has been a little crazy here as we are dealing with Covid. My son and his family aside from the 17 year old are all sick. My granddaughter is staying at our carriage house. We are trying to be as supportive as possible with errand running and meals. To top it all off I think I broke my toe on Sunday, so life as I know it during the holidays has come to a near stop. The ‘Ole Buckeye is having to pick up the slack.
The menu plan has been adjusted to feed 3 rather than 2 while attmepting to incorporate favorites for the 17 year old and keep her ever hungry self… supplied!
Breakfast
All of the breakfasts I have planned are repeats of favorites and the recipes can be found on previous posts. I have alternated between S and E offerings.
Lunch
I have several new lunch soup offerings planned and if time permits I may even make a batch of the chicken salad.

White Cheddar Sausage Breakfast Biscuits
We love Greek food. This recipe seemed very unique as far as ingredients are concerned…a soup with quinoa, lots of kalamata olives, chicken, lemon and spices. It was definitely enhanced with the addition of a sprinkling of feta cheese. It makes a huge batch of soup…luckily we enjoyed it…for several days.

White chicken chili has been a family favorite for years. In fact our daughter requested it for her birthday dinner. I don’t fix it very often. Why? I hate to clean and dice chicken thighs. Obviously that should not be a big deal, but it is painstakingly slow. The recipe allows the use of chicken breasts, but the flavor would simply not be the same.
Well this lunch casserole was a pleasant surprise. For obvious reasons this is not on plan due to the crescents, but I always follow the recipe the first time and then make adjustments. By the way, did you know there are now crescent rolls in sheets for baking? Very convenient. I happened to make this for the 17 year old. She added sour cream and a ton of shredded lettuce. She loved it. Now I am contemplating how to make this recipe more compliant.

As we are heavy into the Christmas season I am attempting to keep up with tradition. Aside from the fact that they are relatively unhealthily the treats that we enjoy year after year are being prepared. Once a year I hold on to so many traditions and we enjoy each and every one.
