2020 Week 41 Menu Plan

The 2020 week 41 Menu Plan will look very much like week 40. They say “the best laid plans…”. That is exactly what happened last week. Due to family circumstances, we were out of town from Saturday though Tuesday. Obviously the menu plan completely changed. Not only did we not have the planned meals between Saturday and Tuesday, but I also adapted other meals to utilize foods for freshness.

Breakfast-Lunch-Dinner

In order to keep things simple, breakfast relies on BAM cake from the freezer. Since I never made the upside down apple cake last week, it reappears for breakfast this week as does the new blintz bake. 

Before our departure, I filled the freezer with leftovers. Lunches will come from the freezer and the salads planned for the end of week 40 move to week 41.

The bulk of the meals planned for 2020 week 41 dinners have moved from week 40. We have planned a family dinner for all of us on Thursday evening, since my daughter will be out of town during the rest of October. The ‘Ole Buckeye and I will be “dog sitting” at our son’s for the weekend as our granddaughters participate in a soccer tournament in northern Virginia. I have planned a family favorite meatloaf for our evening together.

Hits and Misses

A featured recipe on the Trim Healthy Mama website combined with the fact that I had ripened pears made for an easy decision to try this interesting recipe. The muffins were extremely moist.

I know good things don’t last, but the specials on peaches continue and so does enjoying a favorite breakfast bake. Yum!

I love simple quick recipes. Moreover I love great tasting simple quick recipes. This one fits the bill. It is ready in no time and delicious. Dinner was prepared in record time and thoroughly enjoyed.

Shredded cheese has cellulose which is a wood product (aka Sawdust) so the shreds do not stick together. The FDA allows up to 4%. Is convenience really worth it?

Recap

The warning as we left on our road trip was that everyone remember the condition of the freezer. I crammed so much food in the garage freezer that it is a booby trap with the contents ready to explode when the door is opened. When we return home we have a busy week. We will be “staying over” with our granddaughters while the P’S are out of town. I have no idea if we will be providing dinner since it is the last leg of our trip home. I also need to figure out a complete meal for our Thursday family dinner. Lots to do and lots to enjoy. Here’s to another week of healthy eating! Bon Appetit.
