Okay. Around here Wednesdays are errand running days. This usually means a trip to the grocery and to Costco….at least.
This week we are starting on Weight Watchers. Sigh. My daughter has joined online and is tracking points. I am trying to eat more healthily and get rid of this nuisance of a muffin top. Getting to be a major muffin top.
So we planned meals for the week and hit the stops today. First the local “Farmers Market” (actually a medium sized grocery that recently opened specializing in produce…much at a good price), the supermarket and Costco.
These stops, especially with a toddler in tow (or towing), take time and energy. There was little time left to unload and organize (including grinding ground beef since it was the most cost effective way to get really lean ground beef), before the boys needed to be picked up from school.
Then homework, and moods, and toddler play, and potty training all at the same time that the two of us were trying to prepare Slender Chicken Cordon Bleu and Balsamic Roasted Vegetables (originally to be served with mashed potatoes but life got in the way in a major way). Between pouts and fusses and tears (some real, some fake), we sliced chicken, pounded it thin, seasoned and filled, chopped and tossed, then roasted.
The dinner was delicious. I mean really delicious. Try the Skinny Taste Chicken Cordon Bleu for sure.If you are not trying to solve the problems of three young children while fixing this meal, it is not all that complex. The trickiest part is dealing with rolling multiple servings while keeping your chickeny fingers from contaminating the salt shaker, pepper mill, ham and swiss cheese. Luckily, my daughter and I could double team at that point in time since we only had one child whining about needing help with homework and the potty training accident had been cleared. Sigh.
We also had Weight Watchers Balsamic Roasted Vegetables. Quite good. But roasted vegetables are quite good aren’t they. Unless, you are nine…then you have to pout for an interminable amount of time until you hold your nose and eat them to be able to eat the scoop of ice cream your gloating siblings are eating….

This looks delicious. Wesley and I have apparently accumulated the entire muffin, not just the muffin top, so skinny delicious recipes are much appreciated. I agree with Carol, eager to watch the trials and tribulations. I never had the fortitude to be weighed that often; my tracker these days is how the clothes fit. Okay, I’m rationalizing…
