Whew. The first week is over and we are into the second week of trying to incorporate diabetic friendly recipes into our diet. With seven folks, (three of whom are kids below the age of 12 and have no compulsion to eat something they do not LOVE) and other dietary needs (Feingold and trying not to gain weight), it has been a challenge. We have ideas on how to modify and improve the next week (reducing fats while limiting and evening out carb consumption throughout the day). I will share the menu plan soon.
But, how did it go last week?
Day 1 Planned: Roasted Chicken Sausages with Sweet and Sour Cabbage, Better then Potatoes Cheesy Cauliflower. Eeek. Fail. Grandma had picked Spicy Italian Chicken Sausages that most of the kids rejected. Also, they did not like the cabbage or cauliflower. The adults did not like any of the vegetables enough to repeat.
Day 2 Planned: Tacos with Slow Cooker Refried Beans and Slow Cooker Taco Meat. Yippee! Success! Raving success! This will probably be a weekly meal to replace the beloved pizza night.
Day 3 Planned: Stuffed Chicken Parmesan Meatloaf with roasted green beans, tomatoes and mushrooms. Success. Everyone liked the chicken parmesan meatloaf though we plan on making individual meatloaves in muffin tins since when you slice the large meatloaf, the cheese begins flowing out. The individual muffins will allow each person to have their own treasure trove of cheese.
Day 4 Planned: Superfood Chicken Soup with Besan Puda. Ah, no. Giant Fail. The soup was not loved by anyone. To be fair we did not have time for the Puda. Maybe another day, without this soup.
Day 5 Planned: New England Dinner. No opinion. The hockey schedule got in the way and the meal was not prepared with the cabbage so the flavor was different and the vegetables sparse. We will try this one again.
Day 6 Planned: Melanie’s Cordon Bleu from Fix It and Forget It Diabetic Slow Cooker Cookbook, with broccoli. A success. This one was a success with young and old. Add it to the binder for repeaters!
Day 7 Planned: Cajun Tater Tot Kebobs. Uh, after several fails during the week, we decided not to base a meal on cauliflower tots. We did serve them as a side with another main. The tots were a success with the kids and adults when fresh from the oven but did not reheat well (microwave) for The One returning from work.
So, the week has ended with no one starving and most improving diet choices. We have been modifying many of the low carb recipes to lower fat by choosing skim or low fat cheese choices instead of full fat; using no fat evaporated milk instead of cream. Now my daughter is researching recipes that will even out carb consumption throughout the day instead of severely limiting it at dinner.
The doctor will have input on Monday.
