Week #33 in Review

Week #33…… another week when I was able to relax and enjoy the fruits of my labor.  Menu plan #33 provided an abundance of cook once/eat twice meals, a family get together for game day and time for numerous projects around the house.

Tuesday the ‘Ole Buckeye had a dinner meeting and I had a smattering of various leftovers clearing the refrigerator of multiple plastic storage containers.

Wednesday, Thursday, and Friday were Cook Once/Eat Twice meals, including pork chops on Wednesday, and Lemon Chicken on Friday.  The ‘Ole Buckeye lucked out on Thursday.  His first successful attempt at Thursday food prep was a “night out” and it provided enough left overs to take home.  Guess what his next Thursday’s meal entailed?  You got it. Reheated Second Street Grill Entrees!

On Saturday I made a simple pork tenderloin dinner with french fried sweet potatoes.  I seasoned the tenderloin with Emeril’s seasoning and actually prepared it differently than I usually do.  I normally do not brown my tenderloin.  However I am continually getting educated by various recipes and chefs teaching that browning adds much more flavor.  I hate to brown if I don’t need to, because it splatters my stove and creates clean up.  I tried a different method on Saturday.  The recipe called for the skillet to be placed in the 425 degree oven to heat for 10 minutes than add the oil.   Next remove the skillet and add the tenderloin, return to the oven, roast for 10 minutes, pull skillet out and turn the meat to the other side and roast for an additional 10 minutes.  This allows the meat to roast as well as sear.

The result…a splattered oven and oven door rather than the stovetop.  Although the tenderloin was delicious the clean up left much to be desired.

Sunday was our Family dinner….Super Bowl Fare.

Starters:  Chex Mix, Guacamole, and Chili Con Queso.  My daughter in law provided a Buffalo Chicken Dip.

(I tried a new version of chex mix.  Good, but the ‘Ole Buckeye prefers the original.)

To round out the Super Bowl Sunday Family Night, my daughter provided dessert, a Heath Bar Dip with apples and pretzels for dipping,  Yum!

Monday was a repeat of Chicken Paprika, my grand daughter’s “thumbs up” chicken recipe.  It was the second attempt at this tasty chicken which has now been added to the family favorites.  It has a depth of flavor that is truly enjoyable.

We rounded out the week with a Tuesday night repeat of game day fare… sloppy joes and salad.

Good eating once again with very little time in the kitchen, plus we shared good family times.  #33 proved to be yet another salute to cooking once and enjoying the fruits of our labor multiple times.
