The menu plan for week 17 is filled with recipe favorites. I have only one new meal planned. I am keeping things fairly simple since the week is filled with lots of social and family happenings. In addition I am hosting our monthly Bunco evening on Tuesday and that means house cleaning, decorating and creating a festive meal and drinks.

I would be remiss if I didn’t offer an opinion on the meals from week 16.
I decided to try a new recipe for the salmon. I googled “ultimate” salmon and since I had the ingredients on hand, I gave it a try. It was very good, however the ‘Ole Buckeye loves my traditional preparation and was disappointed with this version. Sometimes trying something new backfires. Lesson learned for the next time.
I must admit that I am not a fan of egg whites scrambled or in an omelet as a fuel pull. I ran across this recipe and it makes all the difference in the world. It not only flavors the egg whites, but adds enough color to trick my brain into thinking I am eating whole eggs. I added spinach for this first try, but envision lots of different vegi additions. I am learning more and more that experimenting with spices makes all the difference in enjoying what I eat.
Actually I am not sure why I tried this recipe…dill pickles, cheese, and chicken? Truly not a recipe that would normally catch my attention, however this is quite good and a satisfying lunch.
Greek Shrimp with Tomatoes and Feta
You know this must be a great dish if the ‘Ole Buckeye requests it for Fathers’ Day dinner. This is definitely a family favorite.
The tasty turkey meatballs were a fuel pull recipe tucked away in the freezer. I knew they would be bland so I researched the recipe and found a honey-less mustard sauce to go with it that is also a fuel pull, but only available on the THM website Perfect. I served them with a cauliflower rice dish that was great as well, but I need to perfect it before posting.
Looking Ahead
All in all it was a successful week of eating. Unfortunately once again I am late posting the menu plan for week 17. I get the plans together and do the grocery runs, but never find the time to get it all together. I must do better. Next week will be even more difficult since I host our bunco group. Sigh. I think I got more done when I worked full time. (Oh wait, retirement is full time work)!
This week promises to be special. Wine night with the Tiki Band is always a hoot. Celebrating Father’s Day with the whole family will be special as well since our son has been in training and away from family for weeks. Bunco is always so much fun…but I will be incredibly busy preparing for the evening. (I am too much like my mother.) So although a little late, I am ready for the week ahead with healthy meals and lots of social time. Bon Appetit!
