Week 36, 2019 with Trim Healthy Mama
The post for week 36 is late…extremely late. The week totally got away from me even though I finished my menu plans early…I had to. Why? We are planning a trip, 3 weeks long. We had a myriad of appointments as well as driving the grand girls. However, the biggest interruption to our normal relaxed schedule was Dorian. Preparing for a hurricane can take days, which it did. Now that Dorian is arriving, I finally have the opportunity to write my post.
My main goal with menus was to clear out the refrigerator while maintaining my commitment to the THM eating plan. I also wanted to try the Jimmy Dean Simple Scrambles since they are THM approved. I think they will be the perfect breakfast when we are on the road or have a kitchenette with only a microwave in our hotel room. The blueberry pancake is from the freezer.
We will be in San Diego for one week, arriving late Sunday evening, Dorian permitting. Our room will have a small refrigerator and a microwave. I am hoping that we can get to a grocery store on Monday to provision for several breakfasts and lunches.
Breakfast
Lunch
The lunches planned for week 36 include grilled sausage that we grilled earlier in the week and Gazpacho…both planned in case of loss of power at the end of the week.
We will be in San Diego on Monday and Tuesday. I am hoping to enjoy some of the local fare for lunch and dinner, but I also plan to provision for some lunches, snacks, and wine!
Dinner
The dinners for week 36 include several frozen meats. The pork loin will create space in the freezer, and I plan to use frozen sausage and ground beef to make meatballs for the wine night appetizer. East Beach wine nights are great. Each couple brings a wine from the region specified as well as an appetizer from the region to share. It will be a great way to celebrate sunshine after Dorian blows away.
Recap
I do want to list several new recipes I tried during the week…all successful. It is a repeat for the Pimento Cheese…it continues to be loudly acclaimed.
We enjoyed the chicken taco casserole, however I will sautés the onions in the future before adding to the casserole.
Please note I use cheddar and pepper jack cheeses in this recipe.
As we wait for the winds and flood waters to recede, we look forward to our much anticipated vacation ahead. Eating on the road and abiding by the THM plan is always a challenge, but hopefully we can eat healthy and enjoy experiencing new places. Bon Appetit!
