Week 46, 2019 with Trim Healthy Mama
The menu plan for week 46 continues to focus on meals from the Trim Healthy Mama Cookbooks or recipes shared on their “Poddy”.
The breakfasts planned during week 46 include tried and true E meals taken from the original THM cookbook, utilizing both bananas and blueberries begging to be used. Hopefully I can freeze a portion of each to be used during the busy holiday season ahead. I have also come across an interesting breakfast sandwich using biscuits. Since we enjoyed the Keto biscuits so much, I am anxious to give this version a whirl.
Keto Biscuit Breakfast Sandwiches
The lunches planned for week 46 will make use of the Folio wraps recently purchased at Costco. This is basically a low carb wrap made of cheese. I have been reading about them, and was excited to find them at Costco. If we find them successful, I am sure they will become a lunch mainstay.
I am also anxious to try a Thai Salad made with either tuna or chicken that was introduced on the “Poddy”. I will admit that I am not a fan of listening to this broadcast, but often they share valuable information and recipes.
The dinners planned for week 46 include several meals prepared by my daughter from Green Chef. I am particularly looking forward to the blackened shrimp and grits which we have had in the past. Delish. This time I need to identify the spices used in the recipe, so we can recreate it on our own. Friday night is a family dinner celebrating dual birthdays…the ‘Ole Buckeye and I. Rounding out the week are family favorites… the crockpot lasagna and a new take on crack chicken.
Recap
First I will recap the failures. These are meals that we ate but did not particularly enjoy. The coconut chicken tenders and egg roll in a bowl will not appear on our table in the future. However, both meals did appear later in the week during the lunch hour taking the place of several of the planned soups. In fact, the lunches planned for week 45 were basically shelved due to so many leftovers from dinners. We also enjoyed a lunch out at The Trellis when we spent a 70 degree November day in Colonial Williamsburg.
The first pleasant surprise came with a breakfast entree…the egg white muffins. Where have these been all of my life? It is hard to believe that I have had this recipe at my fingertips in the Trim Healthy Table cookbook, but never tried it, especially considering that I constantly search for E meals. So quick, so easy, even the ‘Ole Buckeye gave them a thumbs up.
The pumpkin BAM cake, also found in Trim Healthy Table was a success as well. We enjoyed it both as a breakfast, and also as a snack.
The biggest hit of the week was the Creamy Bacon Chicken…a keeper. This is a very simple meal and true comfort food. This will become a family favorite…a top tier chix fix!
We really had a great week of eating. Even though I plan every meal, we have learned to make adjustments to avoid waste and enjoy ingredients while they are still fresh.
