2020 End of Year Menu Plan
The 2020 end of year menu plan is being put together on the fly since we are still in Aruba, leaving Wednesday. It has taken very little planning really, because I am dependent on freezer stash until we make our trips to the grocery once home. Luckily my daughter is picking up a few things for us before we arrive.
Breakfast
Breakfast during our last 2 days on the island will be at the Renaissance and include either a light breakfast at the restaurant or leftovers from the time share. (There is leftover blueberry pancake and sausage and egg casserole as well as bacon.) When we arrive home the freezer will provide the blueberry pancake and BAM cake. The only fresh preparation will be bacon and eggs.
Lunch
Luckily when we left on vacation I stashed all of the remaining soup in the freezer making it easy to plan the lunch menu once the soups thaw. I added the quesadillas and portobello pizzas since they require little prep. I will ask my daughter to grab the mushrooms on her grocery run. Everything else should be on hand at home.
Dinner
The dinner plans are super easy since we finish our trip eating out and have been invited to celebrate New Year’s Eve and Birthday at my son’s and New Year’s Day with my daughter. I have meatballs and a chuck roast in the freezer…easy, breezy.
Hits and Misses
I will say that the entire week’s menu for the timeshare was a huge success. Aside from having too much food, the offerings were enjoyed by all. This is a timeshare menu plan that I will keep on hand for future use. The only change would be less brats and more quesadillas for lunches. I did make one change to the dinner menu. In place of the chicken piccata I prepared Country Chicken Kiev. There was only one new recipe that I served…the winter sunshine salad which was a huge hit especially the candied pecans. Definitely a keeper! I do need to get the recipe for the shrimp that my daughter in law made on Christmas Eve…outstanding!

Recap
We had a great week of eating, although it’s funny that I have absolutely no photos of our meals. Planning menus for the timeshare can be difficult. The family was requested to offer suggestions for the future, but all agreed that the food was great…just too much of it. Now that I have a successful plan, it will be utilized in the future with minor adjustments. Our trip was a wonderful escape from routine and pandemic with quality family time creating yet more treasured memories. We look forward to healthy eating in the New Year. Bon Appetit.
