2021 Week 5 Menu Plan

The 2021 week 5 menu plan is complete and is filled with eat again meals, several family favorites, and a few new recipes. 

Breakfast

Breakfasts during 2021 week 5 include favorites combining both S and E meals. We will also be finishing the Greek omelet.

The dinners this week are super easy since most of them are “eat again” offerings. The others are family favorites. The only new recipe is the Pizza Salad that will accompany the Triple Meat Pizza on Super Bowl Sunday.

When I make breakfast cookies I do so in order to pop them in the freezer for quick breakfasts. This is a family favorite to heat and eat.

This “make ahead” Greek omelet recipe was chosen just for that reason…”make ahead” (aside from the fact that our family loves my Greek Scrambled Eggs) Although I prepared and baked this on my “Greek” day, the ultimate goal was to have a make ahead version of a family favorite for future use, including time share menus.

This omelet recipe is a keeper with some changes. This time I used cream in place of milk. Next time I will omit mustard and use more dill, add Greek oregano, kalamata olives, and lemon zest.

The Wicked White Chili was an “okay” addition to our soup recipes, although not a favorite. It made a big pot of soup affording us multiple lunches. Rather that adding yogurt to the entire batch, we added the yogurt each time we reheated the soup for individual lunches.

Mission accomplished! I used my Instant Pot! A goal for this year was to conquer my fear of this “Gadget”. I am not sure I have conquered my fear or its’ use as yet, but I did make a successful dinner using it. The soup I have made before…when I first got the pot, with my daughter’s assistance. The soup proved to be fantastic but I didn’t repeat it because of my irrational fear of the pot. I will admit that I summoned my daughter to watch over the process, but I did it! BTW…soup, Delish.

Okay…I am a believer. After a successful encounter with my Instant Pot earlier in the week (with the encouragement of my sisters) I made my childhood favorite ham and beans using the Instant Pot. The dried beans were done to perfection in 60 minutes, no soaking needed. Served with dumplings I was in comfort food heaven.

Misses

In keeping with my goal to keep the ‘Ole Buckeye happy at breakfast I did a comparison of new pancakes to his favorite THM E pancakes. No contest, the original THM E pancakes win. In fact he decided that there is no reason to “try” any other pancake recipes.

Recap

All in all we had a great week of eating, including getting off plan and enjoying a childhood favorite comfort food. The week also provided success in conquering the fear of the Instant Pot…a New Year’s Resolution. (I even made hard boiled eggs!) Once again the week ahead is filled with no-fuss eat again offerings and not very much experimentation. The cold weather has called for warm comforting foods.
