2021 Week 36 Menu Plan
The 2021 Week 36 Menu Plan is complete. Since we have out of town guests, our plans and activities are dependent on their preferences and the weather. Obviously the meal plan is subject to change. I will have all ingredients on hand in order to prepare what is on the menu regardless of what the daily decisions are.
Breakfast
The breakfast menu consists of eat/again offerings as well as tried and true favorites which are on the rotation frequently. Those recipes have been linked in previous blog posts.
Tex Mex Frittata THM S (without potatoes)
Lunch
The 2021 week 36 lunch menu has one new recipe as well as a repeat gazpacho which I have not made in several years. I will make the S version.
Cheeseburger Pie page 149 Trim Healthy Mama Cookbook
Dinner
We have a ton of leftovers which I plan to use before creating additional meals. The brisket is a pre-seasoned Aldi find and a true experiment and the country chicken Kiev is a long time favorite.
Mississippi Pot Roast THM S
Country Chicken Kiev THM S (I use the original recipe noted by David in the comment section. I only use parmesan to coat the chicken…not bread crumbs.)
Hits (no Misses)
Rather than reviewing each meal that I made in detail, do to time constraints I will link to the recipes that we enjoyed the most during the past week. I will make a notation if there were changes made in order to comply with our eating plan. Since our guests requested the recipes, this will be an easy way to provide them.
An ‘Ole Buckeye favorite…White Cheddar Sausage Biscuits
Sausage Crescent Casserole (without the crescents)
I use 1/2 mayo and 1/2 Greek Yogurt in the dressing and stevia sweetener. I also sub raisins with dried cranberries…Broccoli Salad
I add chopped dill gherkins and chopped fresh dill…Cauliflower Potato Salad
I omitted the pancetta...Balsamic Brussels Sprouts
Recap
A portion of both week 35 and 36 was spent with old friends and house guests. Some of the meals planned were adjusted for convenience. The weather was our friend while they were here allowing for most of our meals to be enjoyed in our courtyard.
We visited Historic Jamestowne and were treated to an amazing historical presentation by Willie Balderson our guide. I only wish every American could experience his enthusiasm for sharing history and its’ importance.
After our morning and early afternoon outing I opted to substitute Asiago chicken for the planned Marry Me chicken. The adjustment in preparation time allowed us to take dessert (Red White and Blue Trifle) to our son’s home and join his family on a sunset cruise. Not only was the sunset spectacular, but we were able to watch dolphins…too many to count including babies frolicking in the water. We could not have asked for a more perfect evening.
Tuesday morning featured the Victory Rover Naval Base Cruise and another beautiful calm day on the water. Later we were treated to dinner at Becca picked for their outdoor dining…
and the fresh oysters requested by our friends.
They leave us on Wednesday after a lovely visit and sharing old times and memories while making more.
After they leave we will get back to reality. We will return to a normal routine and look forward to the return of our daughter over the weekend. Life is good especially when shared with friends and family over great meals! Bon Appetit!
