2022 Week 7 Menu Plan
The 2022 week 7 menu plan is complete and parts of it will look quite familiar.
Breakfast
Funny thing happened last week…I did not make one single planned breakfast beverage. (Actually not really funny.) The ‘Ole Buckeye had eat again meals or his standby soft boiled eggs. I either fasted or indulged in avocado toast. Thus you will find that the week 6 breakfast menu plan moved to week 7.

Soup’s for lunch during 2022 week 7. The weather still calls for hearty fare and I love the fact that we have so many enjoyable, easily reheated, eat again meals.

Dinner
I am preparing two of our favorite chicken dinners this week and we will have dinner with our daughter on Sunday. The reminder of the week relies on eat again meals all of which taste as good the second time as the first…often even better. I decided to make beef stroganoff for our Valentine’s Day dinner. I actually struggled making the decision. After a morning zoom call with my sisters, the decision was easy. Pat had recently made stroganoff and raved about her new recipe. I had plenty of sliced bella mushrooms on hand as well as the other ingredients. After reviewing my sister’s recipe and pulling out my battered tried and true recipe card, I decided to modify my own in order to make it more keto friendly.

Super Bowl Supper
Super Bowl Sunday was spent watching the afternoon coverage and then the game. We had decided in advance to skip a formal meal and create a spread of appetizers to nimble on all day. It proved to be a great idea and we enjoyed relaxing and grazing and of course watching a great game.

This soup is one of our all time favorites from the Trim Healthy Mama Cookbook.
Valentine’s Day was celebrated with a wedge salad, beef stroganoff, acorn squash and a French lemon cake. Since it was a holiday celebration I served the stroganoff over brown rice. Great dinner accompanied by Asti. It is always a special evening with some bubbly.
Misses…
This feta pasta was added to the dinner menu for several reasons. I had all of the ingredients on hand and the grape tomatoes I had from Costco were tasteless. It doesn’t happen very often, but they were not good enough for salad…they required to be cooked if I was to utilize them at all.

The chuck roast recipe although very good was not nearly as good as our tried and true standby Mississippi Pot Roast. It will not be a repeat.

You can never accuse us of not eating well. We managed to do so once again. The week was filled with both new and tried and true meals along with celebrating Super Bowl and Valentine’s Day. The quest for healthy delicious eating continues. Bon Appetit.
