2021 Week 26 Menu Plan

The 2021 week 26 menu plan is complete and looks forward to the long holiday weekend.

Breakfast

The plans for breakfast focus on E meals, aside from a quick breakfast on Tuesday prior to an early morning dental appointment. All of the breakfast offerings are repeats of those enjoyed in the past.

Yogurt Power Bowl

BAM Cake

Berry Cobbler

Upside Down Peach Oatmeal

THM Pancakes

Lunch

The lunches planned for 2021 week 26 are repeats as well. I had purchased enough ingredients to make the Thai chicken salad but decided to make a half recipe. We enjoyed it so much, that I am making it again. Since plans changed last week I moved the taco pie ahead to this week.

Taco Pie

Thai Chicken Salad with Peanut Dressing

Portobello Pizza

Pizza Quesadillas

Dinner

The dinner plans for the week were relatively easy. I have enough left overs for eat again meals right up until the holiday weekend. At this point I am planning traditional 4 of July meals to share with whoever happens to be here. If Ahi tuna is on sale that will finish the weekend. If not I will plan salmon or shrimp. The sides will be the stars and I am planning several new ones.

Baked BBQ Ribs

Sesame Crusted Seared Ahi

Exciting Sides

Broccoli Bacon Salad

Cauliflower Potato Salad

Broccoli Salad

Keto Strawberry Rhubarb Crisp

Hits and Misses

A great new soup/chili with lots of heat and lots of flavor. A big plus is that it is a cook once eat again lunch.

Sweet Smokey Chipotle Chili

Salad for lunch is always a treat. This was not only very tasty, but also very satisfying even for the ‘Ole Buckeye. It will defiantly be a repeat.

Healthy comfort food…how often does that happen? Another keeper and a two dinner prep!

Shepherds’ Pie

Tried and true and a family favorite!

Greek Turkey Burgers

Recap

Over the past week we juggled meals as we often do. The grand girls were participating in the 2021 Youth Soccer Regional Championships in New Jersey. The 15 year old’s team made it to the semi finals but were defeated 1-0. The ‘Ole Buckeye made the trip up to watch on both Sunday and Monday making adjustments to our planned meals at home.

By the way…has anyone noticed the steep incline of prices for food? I have consistently studied the weekly sale ads of 6 different grocers in our area and have found it to be even more important now. The swings in prices just in the past month is staggering..even though most of the fresh foods I purchase are “in season”. All the more important to plan meals carefully and check the sales and utilize the coupons. Managing healthy eating is not only important, but time consuming. We continue the adventure of healthy eating. Bon Appetit!
