2021 Week 48 Menu Plan

The 2021 week 48 menu plan is complete. Due to changes in plans there were many meals from week 47 that never made it to the table. As a result meals that were planned but not completed appear once again on the 2021 week 48 menu plan. As originally planned the new recipes are taken from the Trim Healthy Future Cookbook.

Breakfast

I skipped so many breakfasts last week that I didn’t need to prepare the Breakfast Bread Pudding. As a result it appears once again and I am anxious to give it a try.

The Flexible Fajita Soup recipe made so many servings that there was no need for the Greek Chicken Soup, so I will give it a whirl this week. The other planned lunch recipes are repeats…standbys that I routinely fall back on.

My dinner plans are super easy filled with eat again options. The only new recipe is the Turkey Burgers. The ‘Ole Buckeye will need to make a decision for his dinner out. Our original plans to spend the weekend in Indianapolis were ruined by Michigan’s win over Ohio State. Sigh! We watched the game at my son’s and had dinner with them on Saturday, thus the White Chicken Chili moved to this week.

Hits and Misses

We enjoyed family favorite Fajitas and Roasted Sausage and Peppers having plenty for cook once/eat twice meals.

I forgo the potatoes in this recipe and use extra peppers and onions. 

Roasted Sausage, Peppers, and Onions

The only new recipe last week was the Shepard’s Pie Skillet. This proved to be pure comfort food and a true cook once eat again meal. The cauliflower tasted like true mashed potatoes. A winner worth repeating.

Recap

With the return to “life after Thanksgiving” comes the busy-ness of decorating for the holidays along with preparing family favorite recipes that have become a tradition in December. I continue to make several treats that are not on plan that would be greatly missed by the entire family if they didn’t make an appearance. On plan festive foods offering alternatives for all of us will also be included. I will be researching some new options as well as repeating several successful ones. Let the madness begin!
