2022 Week 15 Menu Plan
The 2022 week 15 menu plan is complete.
Breakfast
I am using a combination of S and E meals for both breakfast and lunch. The only new recipe is the breakfast casserole from the THM Cookbook. I have chosen this recipe for 2 reasons…one is that is is a multiple breakfast, the other is that includes a ‘cream soup” that can be used for other recipes.

What do you do when you have cabbage that is on its’ last leg…find a soup recipe. Even better, find a slow cooker soup recipe so there is little fuss. The soup begins the week which includes two new recipes…the chicken salad and the Rueben in a Bowl ( I still have corned beef in the freezer).

Dinner
I have a week’s worth of eat again dinners allowing me to concentrate on a family dinner on Easter. I have been racking my brain for something special, yet the meal is still unplanned. The only thing that for sure will be included is a roasted beet salad and glorified cabbage. Much more planning to be done!

Hits and Misses
All of the recipes from week 14 were successful.
This breakfast casserole (minus the crescent rolls) was very good. I would most likely include the crescents for a company breakfast.
Breakfast Turkey Sausage Casserole
The ‘Ole Buckeye had this chicken salad as a sandwich. I enjoyed it in a low carb wrap with fresh spinach.
I made these biscuits to have under my chicken a la king and they worked beautifully.
This bowl was quite enjoyable, however the best part of this recipe was the Greek marinade for the chicken. It is a definite keeper. I will use it for grilled chicken in the future.
A true favorite! The best way I have found for spaghetti squash. I keep reminding myself to try this with a spicy Italian sausage…maybe next time. By the way, this casserole feeds the 2 of us for 4 evening meals!

Spring has finally arrived with warmer temperatures and the return of our Farmers Market. Although grocery prices are soaring, I am on the hunt for quality food and continue to watch the grocery store specials. As always healthy eating is the ultimate goal and new exciting recipes are always welcomed. Bon Appetit!
