Chiles Rellenos

I made this dish for the second time this past Sunday.  I made it for brunch explaining that particular fact to the ‘Ole Buckeye as I prepared the eggs.  He wanted to go for a walk.  Let me explain about his walks.  Our son lives 3 blocks away.  Often the ‘Ole Buckeye’s walk takes him there.  Sunday was no exception.  Sunday morning was also mid Armageddon Storm of 2016 which during the previous night had taken out a portion of our son’s upper porch.  You got it right…the ‘Ole Buckeye busied himself with assisting in reparations.  WITHOUT COMMUNICATING!

The egg dish was made and put into the oven to stay warm.  He finally arrived.  He was incredulous that I was slightly upset.  We finally had brunch—after 2!

That being said, I need to explain several things about Pioneer Woman’s recipe.  One observation you may have already made is that the picture of the chilis rellenos is totally unappetizing.  In fact the photo is so unappealing that had I not watched this segment on her TV show, I would never have made it.  It does however make me feel much better about my own photography!

Secondly, I made several adaptations to the original recipe.  The first change  that I made was to layer the mild chilis one direction on the first layer and the opposite direction on the second layer to assure having chilis in each bite.  The second change I made was to use shredded pepper jack cheese in place of the milder Monterey Jack.  We like things spicy.  These changes really added to the flavor, but were not overwhelming at all.

IMG_1885We liked this dish the first time.  We enjoyed it even more the second time.  Of course that might be because we were starving by the time we actually ate!
