2021 Week 1 Menu Plan

The new year begins with the 2021 week 1 menu plan and a recommitment to serve healthy meals following a keto and Trim Healthy Mama eating plan. Luckily my daughter has volunteered to provide three Green Chef meals during the week, all of which have interesting flavor profiles.

Breakfast

The breakfasts planned for 2021 week 1 include the eat again sausage and egg casserole as well as a giant blueberry pancake from the freezer. There will be a repeat of breakfast cookies, which we will not only enjoy, but I will tuck them into the freezer as well to enjoy at a later time. Two new recipes planned are the blueberry scones and the baked oatmeal. I have my fingers crossed for a successful scone recipe. The ‘Ole Buckeye loves scones and my go to recipe is definitely off plan.

The lunches planned include a favorite cheapskate soup, a new version of a cabbage and sausage skillet, a family favorite pizza quesadillas, and a new Tortilla “E”soup that looks promising.

The dinners for the week are tried and true aside from the Green Chef keto meals that my daughter plans to prepare. I am hoping that there will be enough from the meals that I am preparing to provide several eat again options next week.

Hits and Misses

The meals for the final week of 2020 were all repeats of previous hits. We did have a lovely evening at Atardi on the beach at the Aruba Marriott. 

I had the blackened Mahi Mahi and the ‘Ole Buckeye had the macadamia encrusted Grouper after sharing a Tomato Caprese featuring Burrata mozzarella. It was a lovely evening the night before our departure.

Food for Thought

Recap

It is always difficult coming back to reality after a wonderful trip. When I planned the menu for our return I was dependent on using foods on hand until we could go to the grocery after the holiday weekend. I have planned a menu requiring more activity in the kitchen than I am accustomed to these past weeks. Hopefully I can jump back into a normal routine. I also need to return to a healthy eating plan rather than holiday celebration eating! May the New Year begin. Bon Appetit!
