Menu Plan Week #31

As I prepare for another week of good eating that incorporates my old and new goals, I have determined that I might have been slightly over industrious in my planning.  Week #31 has several recipes that have intrigued me, but I haven’t taken the initiative to try.  The sausage and grapes caught my ear one morning as I listened to Rachael Ray and I recently searched for the recipe.  I have made roasted grapes and they are delish so I am anxious to give this Italian one pan meal a go.

Wednesday I am making a birthday dinner meal for my daughter in law.  Her birthday was on New Year’s Eve and we were out of town.  The creamy leek and mushroom sauce for the chicken breasts is proven.  I just need to come up with the perfect sides and an over the top dessert.

If you are like me, sometimes the main course is the easy part.  Coming up with the perfect sides and salads, especially healthy ones, becomes the real trick.

I have 2 soups planned for Week #31.  Soups have been great for winter dinners, and even better left over for hardy lunches.

I have a huge bag of broccoli from Costco that calls for a trial of something other than roasted broccoli or broccoli salad.  The beef and broccoli recipe looks appealing, so I will give it a try.  It will also give the ‘Ole Buckeye a break from chicken.

I don’t know about you, but planning takes a lot of time.  I make the grocery list according to the plan so that I have all ingredients needed on hand.   Week #31 called for more stocking up than normal.  For some reason I am low on some of my staples most probably due to our travels last month.
