2022 Week 49 Menu Plan
The 2022 week 49 menu plan is complete. I am planning a girls’ weekend in Ohio so the plan reflects meals made ahead for the ‘Ole Buckeye while I am gone.
Breakfast
Lots of new recipes for breakfast. The berry baked oatmeal is the only repeat and I made it again because I am considering it for Christmas week at the time share.

Lunch
The chili is a carryover from last week. The Zuppa Toscana is a favorite that we haven’t had in a long time.

Dinner
Thank God for Cook Once/Eat Again meals. It made menu planning for the ‘Ole Buckeye a piece of cake. My daughter was gracious enough to invite him for Sunday dinner.
Hits and Misses
This was a flavorful and filling breakfast. The key is to remember to soak the farro overnight and roast the almonds. If you do, this comes together quickly. I love the texture of farro and the pop of berries and the added crunch of almonds were perfect.
Farro, Almond, and Blueberry Breakfast Cereal
This breakfast is an old standby. The only change I have made is using unsweetened almond milk yogurt. This time I also added blueberries and raspberries since I had them on hand.
I made this soup as directed aside from using an almond cream to avoid the dairy. It calls for a great deal of turkey in relation to the broth. I added more liquid to make it more like a soup than a stoup (as Rachael Ray calls it). We really liked this soup. In fact it is my favorite soup so far using leftover turkey. It is quite filling and the recipe is definitely a cook once/eat again offering.
The other left over soup I tried was a recipe from Dr. Mark Hyman (a health blog I follow). It was expensive and time consuming. It was ok, but we enjoyed the other soup more.
One of our favorite sides in the winter is this squash. So quick and easy. I change the recipes slightly by using a sugar free maple syrup (Lakanto) and a little maple extract. Easy and delicious.
I included this recipe on our Thanksgiving menu, but we had plenty of sides. I added it to our roast salmon dinner and the beans are very good. A different way to enjoy green beans and the flavor of the shallots was very good.
French String Beans with Shallots
Quick, easy and oh so delicious. This is a staple at our house and we enjoy the second and third day as much as the first. I am always liberal with the peppers.
One of our favorite desserts. Time consuming and expensive but well worth it.

Luckily I did enough cooking ever the past week that I didn’t need to be overly concerned about the ‘Ole Buckeye having healthy choices while I am away. Hopefully I will be able to enjoy healthy eating as well. The adventure continues. Bon Appetit!
