2022 Week 50 Menu Plan
The 2022 week 50 menu plan is complete. Many of the meals have been carried over from week 49. Since I was participating in a girls’ weekend, I over prepared the number of meals for the ‘Ole Buckeye to have while I was gone.
Breakfast
Cranberry is the star of the breakfasts this week. I also plan to make granola in preparation for our trip to Aruba.
Apple Cranberry Steele Cut Oats
Roasted Cranberry, Maple, and Brown Sugar Farro
Lunch
I have lots of leftovers for lunches this week. In fact the only preparation required is for the Zuppa Toscana, a family favorite found in the Trim Healthy Mama Cookbook. The recipe makes enough soup to finish out the week. We will be enjoying a birthday lunch with our daughter at our favorite Greek restaurant OraPax.
Dinner
Dinner consists of old standbys…nothing new. The shrimp dish will be prepared with the birthday girl in mind. The pork chops and salmon need no recipes.
Bliss Burgers A veggie burger found in the Plant You cookbook.
Roasted Salmon with Herb Salsa
Hits and Misses
This oatmeal has become a favorite. The flavors are great and it reheats well.
The chia pudding proved to be a success. I put it in mason jars and the ‘Ole Buckeye had it several mornings while I was out of town.
This chili was exceptionally good and extremely quick and easy to make. Next time I will add more lentils.
This quiche is an all time favorite and can be changed up according to what is on hand. I had broccoli and spinach that needed to be used. The only cheese on hand was Swiss. The combination was very good.
Recap
Last week I prepared meals for the ‘Ole Buckeye while I was away for 4 days. It turned out that his meals were more healthy than mine. I reconnected with my cousins for a girls’ weekend and although there were some healthy choices, I will admit that I didn’t eat as well as I should have. That being said, we had a wonderful weekend and now I have returned to home and plan healthy food. Bon Appetit!
