2023 Week 6 Menu Plan
The 2023 menu plan is being prepared on the fly since we are currently on vacation on Marco Island. The key to the entire plan is leftovers both here and housed in the freezer at home.
Breakfast
Breakfasts at the time share included our favorite sausage casserole and left over baked oatmeals. I made the breakfast cookies before we left home, so they will be waiting for us. Field berry oatmeal is not only quick and easy, but delicious.
Sausage Crescent Roll Casserole
Lunch
Taco Crunch salad for our lunch with friends along with freshened kale salad served all 6 of us. By adding fresh lettuce and veggies to both salads they were great as eat again healthy lunches for the rest of our stay. Soups are waiting for us in the freezer when we return home.
Dinner
Unless we have enough left overs for dinners in, we plan to eat dinners out. On our last evening on Marco Island we have been invited by friends of friends for Happy Hour with heavy appetizers. I am guessing that will suffice as dinner.
Hits and Misses
I included a host of our favorites on the menu at the time share and all of them were quite successful. I will plan to add them to our time share menus in the future.
Vacation (TimeShare Worthy)
Kale and Butternut Squash Salad with Pears and Almonds
Sun Dried Tomato, Basil,Balsamic, Bucatini
Recap
What a great week we have had at the Marriott Crystal Shores, Marco Island. We had the perfect villa with a spectacular view of the gulf and we were even able to hear the waves as we slept at night. Even more special was being able to meet up with many friends while we were here and “catch up”. Although not entirely successful, we did attempt to eat as healthy as possible. I have been thinking that since we travel so often that I should be including posts on our many adventures…maybe in the near future. In the meantime…Bon Appetit!
