2023 Week 14 Menu Plan
The 2023 week 14 Menu Plan is complete.
Breakfast
The oats have it! Not only are these preparations delicious, but so easy to incorporate into travel and timeshare meals.
Lunch
Normally we do not venture out for lunch when on vacation, but since Sunday is Easter I elected to reserve a table for Brunch. I am also excited about the menu offerings at Delisheeyo and we will be in that area of the island at lunch time…so why not?
Dinner
Pasta puttanesca is a staple meal when we cook at the timeshare. It services 2 dinners and is quick and easy to prepare. I have frozen salmon and left over Gochujang sauce for a nice Easter dinner.
Hits and Misses
This easy prep has proved to be a favorite of the ‘Ole Buckeye. The plan is to always keep one on hand.
I think this is the first oatmeal that I have made that is not quite as successful. It is a little to heavy and too sweet.
One of the blogs that I follow is by Dr. Mark Hyman. I have also read his book, the Pegan Diet. I have tried several of his recipes and this soup is one of them. We have a family favorite Zuppa Toscana so it was not an easy decision to try this, but it was very good.
I was supposed to make this sandwich last week, but never did. The ‘Ole Buckeye spent the better part of the day getting the sailboat ready for racing, so instead of the planned lunch, I made this sandwich and I loved it. I toasted bread and spread it with avocado rather than mayo. I used the rest of the veggie layers as suggested but used everything bagel seasoning rather than seasoned salt. What a great healthy sandwich. It will be perfect all summer long.
Wow! What a delicious healthy salad. It is a great lunch whether with something else or on its’ own. Definitely rotation worthy.
Exceptional! I don’t know if we were both really hungry, or if this recipe knocked it out of the park. Both of us agreed that this must be on the rotation…at least once a month. It truly tasted like a meat sauce and the lentils afford plenty of protein. An added bonus…cook once/eat again.
I have never broiled salmon. Normally I bake it and occasionally I pan sear it. Preparing this was a step out of my comfort zone, but it turned out to be a big success. The sauce although hot and spicy gave great flavor. This will definitely be repeated. In fact there is plenty of sauce left for several future meals. I did not make the cucumbers due to lack of time, but I will give them a try next time.
Why do I try more vegan burgers when the Bliss burgers are so great. Unfortunately we have 6 more of these to finish before we leave for Hilton Head!
Recap
It was a successful week of meals on the whole. The next 2 weeks will be partially spent at a timeshare in Hilton Head and Myrtle Beach. I will plan menus prior to the trip to get rid of refrigeratied food and plan the meals both on the road and at the timeshres so that I have the necessary spices and ingredients that can be easily carried in the car. We have made several dinner reservations in advance, but we can always adjust according to how we feel. The resorts are busy with spring break and planning ahead at the better restaurants is a necessity. Hopefully we can find great choices as we continue to pursue eating a plant based, healthy diet.
