Week 41, 2019 with Trim Healthy Mama
Yes, you have read it correctly…week 41. I didn’t just drop off the face of the earth…I traveled the earth during weeks 37-40. Most of the days during those weeks involved travel. After a long break I am settling back into my weekly routine and the plans for week 41 are underway.
Sometimes the best laid plans take a back seat to an uncanceled delivery. I did quite a bit of grocery shopping upon my return home and had a loosely developed menu plan in my head. My daughter had announced that she would be cooking 3 days a week for a few weeks and using low carb meals supplied by Green Chef.
As I was developing my dinner meal plans for week 41, I received an email that my Blue Apron box had shipped. Normally I cancel these deliveries 4-5 weeks ahead, but had failed to do so while on our trip. I would be receiving 3 dinners for two. Jokes on me. That called for a revision of meals planned for week 41. I will fix 2 of the dinners on nights that the 3 of us were not planning on eating together and use one for lunch. This is certainly not what I planned, but need to go with it.
Breakfast
The menu plan for breakfasts during week 41 revolves around family favorites. We have also become fans of Jimmy Dean Simple Scrambles for the hurry up breakfasts during the week, especially on a busy day when lunch time is uncertain.
Lunch
The lunches planned for week 41 are a little more ambitious, especially since I am not doing a lot of evening meals. The pumpkin soup, sweet potato quinoa, and quiche lorraine are all new recipes and the chicken couscous salad is a Blue Apron addition.

Dinner
The dinners planned for the week are mainly Green Chef and Blue Apron additions, with chicken a la king (mushroom sale) and gourmet burgers to fill in.
Roasted Pork and Spiced Vegetables
Most of the meals will be surprises as far as cooking and eating. Using a food delivery service is always an adventure. I have cancelled meals for the next 4 weeks and have considered cancelling my membership all together. I have several free meals available for friends and family that I should give away before doing so.
Recap
I will recap my travels at another time. We were gone nearly a month and I was not ready to return. Normally after 10 days I am ready for home, but not this trip. We enjoyed renewing friendships, great food, and beautiful locations. We are very blessed to be able to travel as we have these past years.
Conclusion
The week ahead will continue to follow the THM eating plan. I will need to adapt several of the Blue Apron meals, but I will embrace the cooking adventures ahead. Bon Appetit!
