Menu Plan for Week 105 with Trim Healthy Mama

The menu plan for week 105 includes more meals than usual planned by our daughter.  She once again ordered Keto meals from Green Chef and although I had already created a menu plan, that plan has been moved to next week.  I must admit that all of the meals last week from Green Chef were exceptional and I say that not only because I had very little cooking responsibility, but the flavors were excellent.   The shaved steak with chimichurri was outstanding.

What I have really come to appreciate with this food delivery service is that Green Chef offers Keto, which is very much aligned with the THM eating plan for S meals.  Now that my daughter wants to participate in meal planning and prep, it is a time efficient way for her to contribute.  Our biggest concern was if meals meant for 2 would feed three of us.  So far we have managed quite well.  We prepare a family size salad that is appropriate for each menu to accompany each entree.

We were particularly concerned about the Greek patties, but we served them on Sail Race night when the ‘Ole Buckeye had dinner with the Sail Crew.  The other two meals were portion sized to easily feed the three of us.  Bonus!

This week not only will we incorporate the three Green Chef meals, but my daughter will be away for a business conference for nearly a week, allowing the ‘Ole Buckeye and I to enjoy several cook once/eat twice meals that would only accommodate two healthy appetites.  Another bonus!

I have already made some glowing remarks about the Green Chef meals that we had last week.  I will definitely attempt to make the shaved steak again   (Shaved Steak with Chimichurri) 

We really liked the roasted butternut squash preparation in this meal as well.  Another keeper.

One of our family favorites on the meal rotation is the Roasted Sausage, Peppers, and Onions.  Roasted Sausage, Peppers, and Potatoes   After several months of omissions, I have been adding the potatoes back into the original recipe, which is not THM, but it makes the ‘Ole Buckeye and the grand girls happy and adds flavor.  When I dish our my portion, I simply avoid the potatoes (at least most of them).  This week I added thinly sliced fennel.  Wow…delish.  It will be a permanent recipe addition.

The other successful recipe addition was the Cinnamon Pecan Breakfast Pancake  THM S, page 328 of Trim Healthy Table.  Lucky for me I joined a challenge a few weeks ago which involved recipes from the THM cookbooks that subscribers had not tried.  My Montana Kitchen Challenge Group (Facebook).

 

It is funny that I purchased the books, scanned the content, used several recipes and left them on the shelf.  I consistently find recipes on facebook posts or blogs and forget to pull the cookbooks.

Upon reevaluation, I have determined that many of my tried and true favorites are out of the cookbooks. In fact I just made a huge stockpot full of Trim Zuppa Toscana (an all time favorite) page 87 THM for the upcoming week’s lunches.   The challenge has exposed me to many that I have missed and taught me that the cookbooks should be a treasured resource.

Even though I was on vacation during much of the challenge, I have taken time to review the many posts, and plan to add many of the suggestions to my future menu plans.  More new and exciting experiments to come!

For now, we continue the THM healthy way of eating and continue the progress of continued weight loss and renewed energy.
