Baby, it’s cold outside and it is supposed to be cold for the upcoming days. The weather puts me in the mood for satisfying comfort food. It is forcing me to think about meals that I have made in the past that are both enjoyable and gratifying. The meal plan for week #39 includes several meals that should be included as part of our meal rotation. It has been much too long since we have had the fajitas and the meat loaf. The ‘Ole Buckeye is planning another comfort food favorite as well.
The grocery specials added fuel to the creative fire. Red, yellow, and orange peppers are the cheapest they have been all winter. Zucchini, cabbage, and asparagus are on sale, as well as corned beef. I have nearly all of the meat I need on hand. The only meat lacking is the corned beef. A trip to Trader Joe’s over the weekend reminded me of how much we enjoyed the corned beef brisket that I purchased there last year.
I added the beef packet and a Huge head of cabbage to my cart. The plan has been formulated!
I have included several favorites in addition to a new slow cooker meal and an untried way of preparing salmon. Both of the new recipes look “good enough to try.”
Much of week #39 revolves around the holiday. (The Green One). We will have a family dinner on Friday evening which will include my daughter and son in law.
I have not spent a lot of time coming up with the sides and salads for the week. I have alternatives and options on hand that will hopefully compliment the meals that are planned. A plus…the ‘Ole Buckeye has a planned trip to Costco, so I can fill in.
