A new week is upon us and I am quickly getting ready for a grocery run. The family is out of town and the ‘Ole Buckeye and I are on our own. If the heat isn’t too unbearable, we hope to do some day trips this week, so the plans may change. I have tried to incorporate menus that will use some of the refrigerator stock as well as requiring easy preparation. I want the week to be flexible.
Tuesday: Meatballs (from the Freezer) and Spaghetti
Wednesday: Grab and Go Raid the Refrigerator (Sail Race Night)
Thursday: Grilled Smoked Sausage and Roasted Vegetables
Friday: Gazpacho (Meatless Meal) Family Favorite
Saturday: Shrimp and Grits
Sunday: Lightened Up Huli Huli Chicken (I am anxious to try my sister’s version)
Monday: Chicken Enchilada Casserole (new)
If I have planned correctly I will be provided with enough leftovers for the beginning of next week. We will be off for a road trip and wedding toward the end next week and I hope to not only skip a grocery run, but skip cooking as well. Let’s keep fingers crossed.
