Even though I did not make any New Years Resolutions, I have decided to attempt to have a meatless meal at least once per week. I also decided last fall to make an attempt to try as many recipes as possible from my ever growing Pinterest board “Looks Good Enough to Try.”
This week I made the Quinoa Fiesta Enchilada Bake. I used red Quinoa and gave the ‘Ole Buckeye no hint of what was coming for dinner.
Luckily I had all the ingredients on hand plus I really needed to use my cilantro and avocado while they were still fresh.
The dish was a success. In fact the Ole Buckeye had 2 big helpings.
I have tried numerous recipes from SkinnyTaste in the past. Many have served me well when I have had to create a meal pleasing to my daughter in law who is on a fairly strict paleo diet.
This one did not disappoint. It’s a keeper.
Quinoa Fiesta Enchilada Bake | Skinnytaste
Quinoa, black beans, corn, cilantro and green chiles covered with a quick homemade enchilada sauce and baked in the oven with cheesy goodness topped with avocado, cilantro and scallions. Perhaps because I’m enchilada obsessed, this is my FAVORITE way to eat quinoa – perfect for Meatless Mondays!!
The recipe made a huge 9x 13 casserole filled meal. Not only did we enjoy the dish on the first evening, but it was easily reheated for a second evening meal, and a lunch yesterday. For the subsequent meals we added a dab of sour cream. Delish!
Two goals accomplished…1. Trying a meal from “Looks Good Enough to Try” and 2. Eating a meatless meal. What was even more gratifying…I used pantry and frig items on hand and we thoroughly enjoyed the leftovers. Yahoo!
