Ok, Ok, not too much creativity here. Most of the meals planned are carryovers from last week. Due to my new found and slowly developing “flexibility”, I have several meals now scheduled for this week that were on the plan last week. There is no flexibility on meals this week because I already have the ingredients that need to be used.
Monday. Kung Pao Chicken Zoodles
Tuesday. Dinner Meeting. Kitchen Closed.
Wednesday Family Night. Cajun Pork Tenderloins with Pineapple Glaze
Thursday. Chicken Marsala
Friday. One Pot Pea and Bacon Pasta in Mascapone Parmesan Sauce.
Saturday and Sunday. Kitchen Closed. We are off for a Spring Break Road Trip!
The key to this week’s cooking will be cleaning out the refrigerator. I will need to be creative with the sides and salads so we don’t waste any fruits and vegetables that won’t keep or freeze. If I try any new recipes for the sides I will include them in my next post of Hits and Misses.
