We ate so well last week and so many meals were shared with family and friends. With great eating comes “leftovers.” The “Ole Buckeye and I have an eventful week planned ahead. Due to our schedule the week will not require a lot of meal planning or preparation. Thursday we leave for Richmond for a meeting on Friday morning. We will hit the road right after the 12 year old’s basketball game Thursday at 5. We plan to have dinner “out” on Thursday and Friday evenings. Saturday we are attending the USO Gala in Hampton Roads. The USO is celebrating 75 years. The ‘Ole Buckeye” has been volunteering for the USO the past several years. All that being said, the kitchen is closed Thursday, Friday and Saturday! When I combine that with the fact that I have leftovers that need to be eaten, it will be an extremely easy planning week. (and even easier preparing week!)
Monday. Leftover Pork Loin Roast, Sweet Potato Wedges, Cauliflower casserole, and salad
Tuesday. Leftover Chicken, Onion Casserole, Roasted Brussel Sprouts and salad.
Wednesday. Family Dinner Sriracha Meatballs with Pasta or Zoodles, Salad, and Roasted Asparagus
Thursday through Satuday. Kitchen Closed
Sunday. Crock Pot Mongolian Beef
Short and sweet. I just need to be sure we clean our the vegetable drawer while things are still fresh! Salads may take some thought.
