Hits and Misses
This great egg bake has become my go-to high protein breakfast bake. It is totally delicious, great reheated on additional mornings and good enough for guests.

Soup for lunch has become the norm at our house. It may require more time to prepare, but it is easily reheated several days and regardless of our schedules, we have a quick nutritious lunch. This new soup is packed with flavor and will be added to the ever growing soup rotation.

Zucchini Tomato Italian Sausage Soup
Salmon is about the only seafood that I prepare at home. I always buy wild caught salmon and at this point order it from Butcher Box. It comes in individually wrapped portions that can be easily thawed at the last minute if needed. This is really convenient. I have a host of great recipes, but always look for more. We enjoy exploring new flavors. This glazed salmon was delicious. I served it with a baked sweet potato, roasted broccoli and an arugula salad with balsamic dressing. Successful eating.

The last time I made these fajitas I raved about how good they were. This is the first time I have made them since and I will never look for another fajitas recipe. These are so good—we just look at each other and can’t believe we are in our own kitchen!

We celebrated Memorial Day by having the family over for Gourmet Pub Burgers on the grill. I decided to serve several new salads with the burger feast. All three salads were new recipes and all three were outstanding. My daughter provided a peanut butter pie for dessert. Dinner was a complete success.
