Diabetic Friendly Meal Plan Week Two – Jersey Style

So, week one went pretty well all told.  We are all feeling better about getting a bit of a handle on this change of diet to incorporate diabetic friendly foods.  The One is feeling a bit better and will get input from the doctor tomorrow.  We will see how that goes.

The kids are pretty thumbs up about the meals we have been serving.  Yes, there was one total flop last week and a side or two that did not make it…but what week of cooking for kids does not bring that?

My daughter, as usual, gets credit for the diabetic friendly menu planning for this week.  We are part way through the week so I know that several of these meals WORK!  I will let you know in my next feedback post but here is the week’s plan.

Day 1: Chicken Pot Pie from Peace Love and Low Carb with a salad  Low Carb Chicken Pot Pie - Gluten Free | Peace Love and Low Carb

Day 2:  Tacos and Burrito Night using Slow Cooker “refried” beans and Crock Pot Taco Meat.  Again.  Every week.

Day 3:  Big Mac Casserole from Peace Love and Low Carb

Day 4:  Slow Cooker Mexican Chicken Soup from Pioneer Woman

Day 5:  Peanut Chicken Skillet from Peace Love and Low Carb with

Buttery Cauliflower Rice Pilaf (also from Peace Love and Low Carb0  and steamed broccoli

Day 6: Beef Stroganoff Soup from Peace Love and Low Carb (okay, yeah there is a theme this week.  This site is a treasure trove!)  My younger grandson loves beef stroganoff but thinks he hates mushrooms.  Ha! We just mince them to hide them.

Day 7:  Cobb Salad  The kids love cobb salad.  We serve it with all the toppings in separate bowls so they go through the serving line like a salad bar.  Always a success!

And so another week of cooking for a diabetic is underway.  I will let you know how cooking life progresses this time around!
