Super Easy Baked Chicken
This super easy baked chicken recipe caught my attention on pinterest about a week ago. It looked like the perfect entree for my husband’s new cooking attempts.
After 49 years of marriage and the provision of most of the evening meals, I decided to assign one night a week to the ‘Ole Buckeye. We decided together (he reluctantly) that Thursdays would become his night to provide the evening meal.
We have not had this schedule in place for very long, but it is proving to be quite successful. I have a night off from the food preparation, and he becomes more acquainted with where things are in the kitchen, as well as some basic training.
I will give you a little background on how all of this transpired. On Tuesdays the ‘Ole Buckeye volunteers at the USO. He helps to prepare and feed anywhere from 50-80 for lunch. He normally comes home quite tired. He also talks about all of the different things he does in their kitchen. Hummmm. Thus I decided to put his new found skills to use at home as well as assist in his learning curve.
It is still too early to determine how successful this experiment will be, but so far he has had great success. In addition, most of his meals have been cook once/eat twice entrees, making it possible to provide meals for 2 Thursdays without additional kitchen duty.

A super quick, insanely simple baked chicken that is moist and absolutely delicious.

- 1 Pound Chicken Breasts 2 Breasts cut crossways into cutlets
- 1 Cup Greek Yogurt
- 1/2 Cups grated parmesan cheese
- 1/4 Tsp Red Pepper Flakes generous
- 1 Tbsp chopped Fresh Parsley Flat leaf
- Preheat the oven to 350 degrees.
- Cut the chicken breasts in half crosswise creating 4 cutlets
- Mix the remaining ingredients in a small bowl.
- Place the cutlets into a 9 x 13 baking dish. Cover one side completely with the sauce mixture. Turn the cutlets over and completely cover the other side with the remaining sauce.
- Bake uncovered in the preheated oven for 50 minutes.
This super easy baked chicken can be served with rice and a green vegetable. This will easily serve 4 people or can be used as a cook once/eat twice entree.
Moist and delicious.
