As I said in my last post we are now not only planning for the Feingold Diet (gluten free, preservative free, artificial color free, etc. etc. etc.; we are now planning for the needs of a diabetic. This first week we are going ultra low carb in the evening meals to allow The One to get used to making daytime choices on the run.
Day 1
Roasted Chicken Sausages (we carefully pick a brand that is Feingold friendly) with Sweet and Sour Cabbage (from the Fix It and Forget It Diabetic Cookbook and
Better Than Potatoes Cheesy Cauliflower Puree from I Breathe I’m Hungry
Day 2
Tacos (an all around family favorite). We use Ortega Fiesta Flats for Taco Shells by the way. It is amazing how many taco shells have preservatives and are not Feingold friendly.
Crock Pot Taco Meat Recipe from Prairie Homestead
Day 3
Stuffed Chicken Parmesan Meatloaf from Peace, Love and Low Carb
with roasted green beans, tomatoes and mushrooms
Day 4
Superfood Chicken Soup from Food Network
with Besan Puda (an Indian Zucchini fritter or pancake)
Day 5
Hearty New England Dinner from Fix It and Forget It Diabetic Slow Cooker Cookbook (FIFIDSCC) (skip the potatoes, amp up the rutabagas)
Day 6
Melanie’s Chicken Cordon Bleu from (FIFIDSCC)
with steamed broccoli
Day 7
Cajun Tater Tot Kebabs from Food Network (replacing “tater” tots with “cauliflower” tots. Green Giant actually makes cauliflower tots but they are not sold locally. We will be making our own.)
“Cajun Tater Tot Kebabs Mix 1/4
cup sour cream with 2 tablespoons Creole mustard. Toss 1/2 each red and yellow bell peppers (cut into chunks) and 6 ounces sliced andouille sausage with
1 tablespoon olive oil and 1/2 teaspoon Cajun seasoning. Bake 1 pound sweet potato Tater Tots at 425 degrees F, 20 minutes; sprinkle with Cajun seasoning and thread onto wooden skewers, alternating with the bell peppers and sausage. Return to the oven until sizzling, 10 minutes. Serve with the mustard sour cream.”
