My meal plan for week #4 is incredibly easy. I have leftovers! I have options! Yahoo!
I have enough left over Mushroom Rotini, Mushroom Meatballs and Chicken in Sun Dried Tomato Cream Sauce to cover three evening meals. All Delish!
The ‘Ole Buckeye has a dinner meeting on Tuesday evening and we have date night on Friday. (We are going out to dinner and to a Beach Boys Concert). Soooo, that means that I am planning only 2 additional meals.
The two meals on the docket are one meatless meal from Skinnytaste, Butternut Squash and Black Bean Enchiladas and a traditional Pork Tenderloin dinner.
I am also anxious to try an 8 Can Taco Soup recipe for lunches during this exceptionally cold winter week.
I love an easy meal week. A week like this allows me to try a complicated dessert or side, simply because I have the extra time. Having so many leftovers also offers me a great deal of flexibility. If I don’t feel like cooking, I have delicious options.
All of the leftover options are meals that we thoroughly enjoyed and we actually look forward to a repeat. I will be adapting different parings with some of the entries, making for a more improved meal.
As a side note, for those of you who refuse to eat leftovers, you are missing out. The key is how you reheat your creations. If done properly dinners are just as good as the first time. As a matter of fact, sometimes they are even better!
