2023 Week 47 Menu Plan

The 2023 week 47 menu plan is complete.

Since I love the convenience of soup…that is what is planned. True to form, I have decided to try two new recipes.

Apart from one new air fryer recipe, the main focus for the week is “The Feast”. Luckily I have plenty of leftovers to get me through to Thursday. So many of the sides planned on Thanksgiving are family recipes. At some point in time I need to incorporate those recipes in the blog for those who might want to recreate them.

Hits and Misses

Quick , easy, moist and delicious. A definite keeper. The breasts took longer than the recipe called for. I used a meat thermometer to check for doneness. Next time I will put the Brussels sprouts in at the beginning of the cook time.

Air Fryer Chicken Breast

Wow! This was a last minute google search for a recipe using my Delicata Squash…and this was absolutely perfection. Definitely a keeper. In fact I will be on the lookout for more of the squash. It is always a short season and not easily found…but I will definitely make this again!!

Maple Roasted Delicata Squash

Don’t let the name fool you…this pasta is a year round delight. It happened to be 76 today here so this was timely. We always get great grape or cherry tomatoes from Costco and my basil will soon be “frosted”, so it was a perfect time to utilize the ingredients for the meal this evening. I had forgotten just how much we enjoyed this “comfort food”.

Summer Garden Pasta

The flavor of this chicken was quite good. Since the ‘Ole Buckeye and I seldom eat an entire chicken breast, I decided to shred the chicken in the sauce and serve it over Trader Joe’s Lentil/Brown Rice Spaghetti. We enjoyed the preparation, but not enough to make it a standby.

All in all we had a great week of eating without spending an enormous time in the kitchen. Most of my time this past week was spent on meal plan 47 which includes a full Thanksgiving menu for 8. While several family members will bring sides, I plan to do the bulk of the food preparation myself. With care and planning I am hoping it will be a successful meal and a great family gathering.
