The 2023 week 29 menu plan is complete and much of it will reflect the plan from week 28. I am not exactly certain what happened last week. I must have had enough meals for eat again offerings because many of the planned meals were never executed.
Breakfast
The quinoa berry bake was the only breakfast aside from Saturday Brunch that I prepared. For that reason I plan to make the other breakfast recipes from week 28.
Lunch
Lunches will reflect a salad that I never made last week plus our favorite Gazpacho. I always have the ingredients on hand for the Tic Toc sandwich which has become a “standby” lunch especially on a busy day.
Dinner
For dinner we have a mix of meals from last week with the addition of several others.

A standby that I try to keep in the refrigerator at all times. I love the fact that this hummus has so much flavor without the oil.
I have decided that one of my specialties is making great salads. Often they provide sides for dinner, but currently they have become healthy lunches, especially in the heat of summer. This kale salad hits all the notes…crunch, tang, sweet, tart…yum. Yet another keeper, especially in the summer when kale is plentiful.
This is definitely more than your typical tomato soup. It has additional veggies and spices. I did alter the recipe to make it more in line with out current eating plan by using a small amount of avocado oil for sautéing , vegan parmesan and plant based milk. I used very little flour to thicken. If you want a true tomato soup…this is not it. However it made a very satisfying lunch.

Although this recipes is not in the confines of the dietary plan we are following I wanted to give it a try. Next time I will make some adjustments to reduce the dairy. I normally attempt a new recipes as written the first time and make adaptations the next. The flavor of this chicken was excellent and it paired well with a family favorite sautéed spinach.
Chicken Cutlets with Sun-Dried Tomato Cream Sauce
This is yet another delicious kale salad.
I made the vegan “meatballs” as directed. I was under the impression that I could add them to a marinara sauce to serve over a lentil pasta. Unfortunately the meatballs fell apart in the sauce…making a meatless meat sauce. Regardless of the loss of shape, the pasta created was flavorful and satisfying.
and Misses
Yet another one pan wonder caught my eye, but this time it was not worth the trouble. This recipe lacked flavor and will certainly not be repeated. We had it for one dinner and then lunch the following day…over and out.
