The 2023 week 25 is complete, although I am hoping to have a family meal at some point during the week while everyone is home. As usual the plan is subject to change.
Breakfast
Oatmeal is the plan for breakfast all week and relies on proven recipes.
Lunch
Lentils, quinoa and beans are taking center stage for lunches and all of the recipes are new and untried.
Dinner
I will be testing 2 new recipes for dinner…orzo and pasta. The plan for roasted sausage and peppers definitely strays from our healthy eating agenda, but this family favorite was calling my name especially with a sale on the sausage.
Dump and Bake Vegan Tuscan Orzo
Pan Roasted Ribeye with Buttery Mushrooms
Hits and Misses
Lots of “Hits” this week, all worthy of repeating. There were 2 new delicious salads that I have linked below. I was especially happy with the Italian salad. I made enough to feed the entire family when we celebrated Father’s day with homemade pizza grilled on the EGG. (My son has become a pizza master.) The salad was a perfect accompaniment and will be repeated often.
Berry Salad with Arugula and Burrata
Recap
We enjoyed a great week of eating without a lot of time spent in the kitchen. Unfortunately I neglected taking pictures so this post leaves much to be desired. However it does accomplish what I need most and that is to have a week of planned meals, ingredients available, and no last minute “What’s for dinner?” panics. The journey continues. Bon Appetit!
