The 2023 week 17 menu plan is complete.
Breakfast
It is so easy to make baked oatmeal for the ‘Ole Buckeye. He enjoys it, adds yogurt and berries for extra protein and I don’t worry about preparing breakfast every morning when I normally fast. This week however I am adding Smoothie Bowls to the mix.

Lunch
There are some new soups on the menu for the week along with a salad that never made it to the table last week. I can always add a salad or sandwich to the soup offering to mix it up.

Dinner
There is very little kitchen time this week with all the leftovers and activities. The soccer games on Tuesday and Thursday evenings require easy leftover meals. I do need to concentrate on planning a family dinner on Saturday…for which I have not had any inspiration.
Hits and Misses
I made 2 repeats from THM last week…the soup has been a favorite and I now know that split peas are great source of protein which is advantageous when eating a more plant based diet.

The Shepherd’s Pie was not as flavorful as I remembered and I may look for an alternative recipe.

A quick trip to the Farmer’s Market on Saturday provided both Collard Greens and Swiss Chard. Both of these are new to me so I gave 2 new recipes a whirl. I enjoyed the Chard more than the Collard Greens but both are extremely healthy.

Several meals on the menu plan from last week moved forward to this week. I consistently over plan or we under eat and the recipes provide more meals than anticipated. We are consistently trying new foods and attempting to eat organic when we can. I am also concentrating on providing more protein at each meal. The Farmer’s Market has resumed as well and I hope to include the freshest produce possible. The journey continues…Bon Appetit!
