This is an easy week of dinner plans. The sheet pan salmon moved from last week and I am anxious to give it a try.

Hits and Misses

This breakfast cake is a favorite and it is high in protein due to the yogurt and eggs and full of mixed berry flavors. It can be eaten at room temperature or heated. It can even be served for dessert.

Berry Oat Breakfast Cake

I changed the menu for Easter morning. The ‘Ole Buckeye always prefers eggs so I prepared one of his favorites. This frittata is delicious. We had it for Easter Brunch along with slices of sour dough toast from the bread I baked on Saturday. 

Southwest Frittata

Grapes were on sale…even black grapes which are even better in this recipe. As a bonus the Johnsonville hot Italian sausage was on sale as well. We got large heads of fresh fennel at the Williamsburg farmers’ market last weekend…so this recipe was a must. It is truly a family favorite and once again we enjoyed it with family. All our dinner needed was a fresh salad and crusty bread. Yum.

I had planned a sheet pan salmon, but I needed to prepare the brisket in advance. Due to the fact that the oven needed to be at 250 degrees for several hours it made preparing the sheet pan salmon an impossibility. I reverted to a favorite version in the air fryer. I will give the sheet pan salmon a try next week.

Best Damn Air Fryer Salmon

I love this bucatini. It is plant based, but lacks protein which I try not to serve as an entree, but it is so darn good. Occasionally it is worth splurging on pasta and enjoying the comfort the meal brings to the table.

Easter

I made this for Easter dinner. The sauce was great…the piece of meat highly disappointing. It was almost totally fat and difficult to eat. A great way to prepare, but not the result we had hoped for.

Midge’s Famous Brisket *New Recipe

This was a new potato recipe and one that I will repeat. Using the convection setting on the oven made all the difference.

Aside from a disappointing entree on Easter the 2025 week 17 menu was a success. I am going to listen to The Food Revolution Summit this week. It has been quite educational the past few years and always has the latest information on healthy food choices. There are different points of view within the scientific community and I am interested in researching the different options. The journey to health continues. Bon Appetit!
